Winemaking – Our unique estate vineyard is located in the Oak Knoll District of Napa Valley. It is bordered on the north by Dry Creek, which has left its legacy by distributing sand and gravelly soil throughout the vineyard. These soils translate into ideal growing conditions for the fruit, yielding deep, concentrated and intense flavors in the wine.
Hand harvested at dawn, the grapes were sorted and de-stemmed and put into tank for a few days to allow for skin contact. Then, using the Saignée (French from bleeding) method, the pink juice from the must (freshly pressed juice) is fermented in stainless steel, and undergoes partial malolactic fermentation.
Floral aromatics of crushed blue iris and dried French lavender give way to nuances of watermelon taffy, strawberry fields and the slightest hint of wild blueberry. Juicy acidity balances layered essence of sun-ripened raspberry, white cherry pith, pink grapefruit and Mandarin zest. Shale like minerality weave around characters of Herbs de Provence, cinnamon stick and vanilla cream on the finish.
