Our Rosé is a delightful result of our Cabernet Sauvignon winemaking. Our Rosé production uses a technique known by the French name “saigneé” for concentrating the flavors in our Cabernet Sauvignon wine by bleeding off a portion of the juice after almost no skin contact. The juice is light pink and is allowed to cold ferment slowly for over 3 weeks resulting in a light, flavorful, and fruity Rosé wine.
Our 2018 Thyrsus Rose has a beautiful rose gold color with welcoming flavors of strawberries, raspberries and perfectly ripe watermelon. On the palate this light and refreshing wine has fruit forward flavors of red cherries with the slightest hint of mandarin orange peel. This wine has a delicate fruit profile but intense aromas; it serves well as a cocktail hour wine or aperitif.
