Vineyard notes

This 100% Cabernet Sauvignon is a combination of two vineyards located in Chiles Valley and the Oak Knoll district of Napa. Both are farmed sustainable practices are in place. Chiles Valley brings an austere strength that pairs beautifully with the approachable nature of the Oak Knoll district’s rich soils.

Cellar notes

Brought into the cellar late in September destemmed and taken directly to tank as whole berries. The must was allowed to cold soak over a period of 3 days allowing indigenous yeast an opportunity to set in and begin a cool, slow fermentation. Punchdowns occurred daily and the must was pressed off sweet allowing the wine to finish fermentation in barrel before bottling. The wine was racked once to prepare for bottling after 20 months in 50% new Bordelaise French oak barrels.
