Our Rosé is a delightful result of our Cabernet Sauvignon winemaking. Our Rosé production uses a technique known by the French name “saigneé” for concentrating the flavors in our Cabernet Sauvignon wine by bleeding off a portion of the juice after almost no skin contact. The juice is light pink and is allowed to cold ferment slowly for over 3 weeks resulting in a light, flavorful, and fruity Rosé wine. The wine is then aged in neutral barrels for 3 months.
Our 2020 rosé is a beautiful coral color. A complex wine with a bouquet of orange peel, clover honey, cotton candy, & watermelon jolly rancher. The palate is light and bright with notes of lemon verbena, strawberry, and a cherry candy finish. This wine is fermented bone dry and is best served with a meal. Pair with BBQ, jambon beurre sandwich, or caprese salad. This is a red wine lover’s rosé. Only 55 cases produced. Drink now or age up to 5 years.
